  • 2 (1000 Grams) Whole Chicken, Cut Into 10 Pieces Per Chicken
  • 1 ½ cups Buttermilk
  • 2 Large Eggs
  • 1 ½ tbsp Black Pepper
  • 1 ¼ tbsp Salt

Seasoning Dredge:


For Brine:

  • Mix the pepper, salt, buttermilk, and 2 eggs in a large size ziplock bag or in a large bowl.
  • Mix in the chicken. Shake the sealed bag, or in the bowl to ensure that it is coated and submerged in the brine.
  • Refrigerate the sealed bag or the wrapped-in-plastic-wrapped bowl. Refrigerate for a minimum of 6 to 24 hours.
  • The longer you let it brine the better your chicken will taste. This keeps it moist while cooking.

For Seasoning Dredge:

  • Take 1 1/2 cups of flour, along with all the seasonings, and put them into the food processor.
  • Pulse until mixed. There shouldn’t be any large flakes of the season.
