The original (at least in the 1970’s) had no cheddar cheese (is there ever cheddar cheese in Italian cuisine?). My guess is that the very pale yellow cheese sauce in the can was a combination of pecorino, romano, and maybe parmesean.

  2. well, I have yet to try this recipe but I always loved the canned Franco American Mac & Cheese when I was a child. For some reason I suddenly had an overwhelming urge for it. I haven’t seen it in many, many years. So I’m excited to find this recipe claiming to taste just the way the canned stuff tastes. I cannot wait. Thank you!
