Ingredients

  • 10 oz Al Dente Carba-Nada Egg Fettuccine Pasta, Recommended
  • 1 lb Chicken Breast (cut into 1/2 inch cubes)
  • 1 cup fresh Broccoli
  • 1/3 tbsp garlic minced
  • 2 1/2 cups chicken stock

  • 4 oz cream cheese (at room temperature)
  • 1 cup Kraft Grated Parmesan Cheese, Recommended
  • 2 1/2 tbsp Unsalted Butter
  • Black Pepper and Salt to taste

For Flash Marinating the Chicken:

  • 1 tsp Black Pepper (crushed)
  • 1/3 tsp Salt

Directions

The chicken is marinated using crushed black pepper and salt, then put aside.

Then, put the Instant Pot to Saute mode and make sure the heating setting is Normal.

Then add butter. When it is melted, add minced garlic. Sauté for 30 seconds.

Then add the chicken stock and deglaze the pot well with a spatula, scraping the sides and top of the pan. This will help loosen any crumbs or bits stuck in the pot. This will avoid the Burn mistake.

CANCEL the SAUTE. Incorporate your Fettuccine Noodles (halved) in the bird’s nest or in a zig-zag pattern. Don’t throw them all in one go. Using a spatula, gently press the fettuccine to ensure that they are completely coated by the stock.

In a single layer, arrange the flash marinated chicken cubes over the fettuccine. Press down gently on the chicken cubes using a spatula until they are coated with a thin coating of the liquid.

Close your lid on the Instant Pot. Secure the Valve and then PRESSURE COOK HIGH for 5 minutes.

After the cooking process has finished, after which the Instant Pot can start to sound a beep. Ten minutes is the recommended time to let the Natural Pressure Release (NPR) after which you can let off the remaining pressure by manually shifting the valve from the sealing position to the VENTING. The lid should be opened carefully after the floating pin of metal falls.

The fettuccine you cook in a pool of liquid. That’s what I want the liquid that remains to be absorbed well by the cheese and will result in the creamy alfredo sauce.

Use the saute function and then keep it at low heat settings. Detangle the cooked fettuccine by stirring it with a spatula or a pair of forks. Add the heated cream and thoroughly combine.

Add the warm cream, and mix it thoroughly.

Incorporate into the mixture cream cheese (room temperature) then cut it into cubes if are able, it will help blend the cheese quickly together with the pasta. Mix thoroughly till the cheese is completely in and there are no lumps.

At this point, it is time to turn Off the Instant Pot. Then, add the cheese parmesan in 3 slots and mix thoroughly until the cheese completely melts and is fully incorporated.

You’ll get a very creamy sauce made of alfredo. Serve with blanched or steaming broccoli leaves (fresh or frozen). Mix everything well and serve immediately.

Notes

Measuring Units, 1 Cup = 240ml 1 teaspoon = 5ml.

Al Dente Fettuccine:

Cook Time: 5 mins (It takes 10 minutes for the pressure to naturally relax).

Softer Fettuccine:

Cook Time: 6 minutes (The natural release of pressure is 20 minutes).

Alfredo Sauce Consistency:

I don’t prefer alfredo fettuccine soupy, but the silky smooth sauce perfectly coating every strand of fettuccine is what I like. If you like an extra sauce, you can include the cheese and dairy but not as much. You should adjust the quantity in accordance with your preference. It will certainly alter the taste of Alfredo sauce.
