Ingredients
- 1/3 cup La Choy Lite Soy Sauce, Recommended
- 1 medium pineapple
- 1 tablespoon pineapple juice
- 3 tablespoon brown sugar
- 2 teaspoon minced fresh ginger
- 3 cloves garlic, minced
- 1 tablespoon vegetable Oil
- 1 teaspoon Kadoya Sesame oil, recommended
- 3/4 lb. boneless skinless chicken breast, chopped
Jerk Marinade
- 2 teaspoon cornstarch
- 2 teaspoon water
- 2 cups cooked rice, for serving
- Sesame seeds, for garnish (optional)
- Thinly sliced green onions, for garnish (optional)
Directions
Make bowls:
Cut the pineapple in half and leave the stem intact. The fruit should be sliced around the edges. Next, use your knife to make some cuts along the length of the fruit. Use a spoon to scoop out the chunks. Reserve about 1 tablespoon of pineapple juice as a sauce. Chop the pineapple into small pieces for garnishing later.
Combine soy sauce and brown sugar with pineapple juice, garlic, ginger, sesame oil, and garlic in a small bowl. Season the chicken with salt.
