Ingredients

  • About 4 cups of Iberia Long Grain Rice, Recommended
  • 8 cups of chicken broth
  • 1 lb Chicken liver
  • 1 lb Ground Pork
  • 8 tbsp Butter
  • 4 cloves of garlic
  • 1/2 cup Diced onions about
  • 1 tsp. Dry mustard approximately
  • 4 tsp. Old Bay Seasoning, Recommended
  • 2 tsp Oregano about
  • Green bell pepper approximately 1 cup
  • 2 bay leaf
  • Salt to your taste
  • Taste black pepper

Half the ingredients will make a small amount of Pappadeaux dirty rice.

Directions

Chop the onion and garlic cloves with a sharp chef’s knife.

In the food processor, add the chicken livers and ground pork. Continue processing for five minutes. They will look like a mixture of meat and vegetables.

In a saucepan, melt 8 tablespoons of butter. Melt the butter in a small saucepan over low heat

In a frying pan, place the meat mixture. Cook over medium heat for 10 minutes, or until they turn a pinkish brown tint.

Add 4 tbsp. of old bay seasoning, pinch oregano, and salt to the mixture of half-cooked meat and continue cooking for 5 more minutes.

Combine the meat and dry mustard in a mixing bowl. Add chopped garlic and onions to the mixture. Three minutes should be enough time to fry them all.

Place the saucepan off the heat and transfer it to a bowl.

Heat the entire pot of chicken broth, chopped bell pepper, and uncooked long-grain white rice in a saucepan.

After 10 minutes, when the broth has to a boil, cover the saucepan and reduce to low heat. Cook the rice for 20 minutes on low heat. Mix the rice well with a spoon occasionally to prevent it from sticking to the bottom.

Transfer the rice into another saucepan and add the cooked meat mixture.

Mix the rice and meat mixture in a saucepan on low heat. After 5 minutes, your dirty rice will be ready.

Ingredients

  • 4 cups of Long Grain Rice
  • 8 cups Chicken Broth
  • 1 lb Chicken Liver
  • 1 lb ground chicken breast
  • 8 Tbsp Butter
  • 8 cloves Garlic (diced).
  • 6 Tbsp Onions (diced).
  • 1 teaspoon Colman’s Dry Mustard, Recommended
  • 4 tsp salt
  • 4 tsp Old Bay Seasoning, Recommended
  • A pinch of Oregano

Directions

Mix the liver and ground chicken breast and then process for about 3-5 minutes in your food processor. Then, in a pan, melt the butter and add the meat mixture.

It should be cooked for 7 minutes. Mix in the salt, oregano, and Old Bay seasoning. Finally, add the dry mustard.

Then, add the onion and garlic to your skillet and cook for 3 minutes. The heat should be turned off.

In a large saucepan, heat the chicken broth and rice. Cover the rice and let it simmer for at least 30 minutes once the stock has reached a boil.

Continue to stir the rice and add your skillet mix. Allow for 20 minutes of simmering time, stirring occasionally. Remove the pan from the heat and serve the rice.

  • 1 cup green bell pepper

  • 3 Tablespoons Salt
  • 3 tablespoons black pepper
  • 2 1/2 teaspoons La Dalia Sweet Smoked Paprika, Recommended
  • 2 teaspoons dry mustard
  • 2 teaspoons ground cumin
  • 1 teaspoon dried thyme leaf
  • 1 teaspoon dried oregano leaf

All to your taste: Thyme, oregano, and more

The ground meat mixture is made up of chicken livers, gizzards, and beef/mutton in equal amounts to make one pound of meat.

Seasoning Mixture: Red pepper, salt, black pepper, paprika, and dry mustard are all included. Thyme, Comino, thyme, and oregano can be added to the mix as well.

These are the steps:

In the oil, brown the ground meat mixture. Cook for one minute after adding the seasoning mix and bay leaf. Cook, stirring periodically, for 3-4 minutes on high heat with the vegetables. Mix in the uncooked rice. Cook on low heat for 10 minutes. In the same pot, add the steamed rice.

Ingredients

  • 2 tablespoons vegetable oil
  • 12 oz boneless pork shoulder, diced
  • 2 diced yellow onions
  • 1 cup chopped celery
  • 1 cup chopped green bell pepper
  • 2 tablespoons paprika
  • 4 teaspoons ground cumin
  • 4 tablespoons freshly ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 2 pieces of Dried Andouille Sausage, diced
  • 16 ounces chicken livers, minced
  • 4 cups long-grain rice
  • 4 teaspoons kosher salt, to your taste
  • 8 cups chicken broth
  • 2 bay leaf
  • 2 dash Worcestershire sauce
  • 1/2 cup chopped green onions
  • 1/2 cup chopped Italian Parsley

These are the steps:

In a large saucepan, heat the oil over medium heat. Stir fry beef or mutton for 5 to 7 minutes.

Cook, stirring frequently, until the onion, celery, and bell pepper are transparent for about 5 minutes. Add paprika and cumin. Mix in the paprika and cumin. 5 minutes, or until vegetables soften, stir periodically.

Turn heat down to medium, then add the andouille sausage. Stir to release flavor. Cook for 2 to 3 minutes. Stir in the chicken livers and rice. Season the mixture with salt and heat broth.

Add Worcestershire sauce and bay leaf. Cover tightly and reduce heat to medium-low. Cook, stirring periodically, for about 25 minutes, or until most of the liquid has been absorbed and the rice is starting to become soft.

Green onions and parsley should be added at this point. Cook rice for 10 minutes on medium to low heat. Before serving, taste the seasonings and take out the bay leaf.

Pappadeaux sauce recipes have been well-received. Pappadeaux Alexander sauce is one of them. To make a complete dish, I will combine the sauce with shrimp and chunk crab meat. This goes well with filthy rice as a side dish. This sweet side dish pairs well with dirty rice. Grab the ingredients and get cooking!

Ingredients

  • Unsalted butter, 12 tbsp
  • Cut about 1 cup of sweet type or yellow onion
  • All-purpose flour – 1 cup
  • Clam juice is approximately 1 cup You can substitute clam juice with chicken broth.
  • 4 cups of whipping cream
  • 1 teaspoon of Kosher salt
  • 1/2 teaspoon white pepper
  • 2 cups Small shrimp uncooked
  • 10 ounces White Lump Crabmeat, Recommended
  • 1/2 tsp Cayenne pepper about  (optional)

Directions

First, melt the butter. In a large saucepan melt 6 tbsp. Melt 6 tbsp butter or margarine on low heat. You should be careful as your butter shouldn’t get brown.

Once the butter has melted, add finely chopped yellow onion pieces. Regular onion can’t be used, as the texture of sweet or yellow onions is very different.

Use a spatula to stir the onions until they become tender. Mix in flour and continue to stir for 2 minutes.

Now, pour the chicken broth or clam juice slowly into the saucepan. Stir constantly over high heat.

Cook for another 2 minutes after adding the whipped cream. The sauce will thicken and become more flavorful as a result of this.

Season the sauce with 1 tsp kosher salt, 1/2 teaspoon of white pepper, and cayenne powder. Chili powder can be substituted for cayenne. Let them cook for five minutes.

Heat the remaining butter in a small pot until it melts.

Place shrimp in a frying pan. Fry for 2 minutes.

Then add the crabmeat to the pan and cook for 7-10 minutes, or until it turns a light brown color.

Remove the frying pan from the heat and transfer the contents to the saucepan after the cooking is finished.

For serving, mix the crabmeat and shrimp with the sauce.
