What Is Pepperidge Farms And Its Bordeaux Cookie?

Pepperidge Farms:

The 123-acre farm owned by Margaret Rudkin’s family in Fairfield, Connecticut, was named Pepperidge Farm in honor of the pepperidge tree.

Pepperidge Farm is an American commercial bakery that was founded in 1937. It has been a Campbell Soup Company subsidiary since 1961 and is headquartered in Norwalk, Connecticut.

Margaret Rudkin started baking bread to feed her son Mark, who had asthma and was allergic to most commercially processed foods, in 1937.

The physician for her son urged her to market the bread to the general public and suggested it to his other patients.

Her first sale was with Mercurio’s Market, a nearby supermarket in Fairfield, Connecticut. Henry Rudkin, a Wall Street dealer, started bringing loaves of bread to New York to sell in specialized shops.

Rudkin began to move the business from her kitchen to her garage. She then moved it to a factory in 1940.

Bordeaux Cookie:

Pepperidge Farm products include Goldfish crackers, bread, crackers, and a variety of cookies. Bordeaux Cookie is among the most popular. The cookies they make are split into two lines, the Distinctive line along with the Farmhouse line.

Every cookie on the “Distinctive” line is named after the name of a European city like those from the Milano cookie, Bordeaux, or Brussels cookie. The Distinctives can’t be easily reproduced by bakers at home.

The Farmhouse brand, in contrast, has a focus on everyday cookies like chocolate chip and shortbread varieties that anyone can make for themselves in a typical home kitchen.

I really enjoyed this cookie, however, after baking it is paper thin. I didn’t add any of the milk because the batter was already soft. How can I make them a little thicker so they will be a cookie and not a “crisp”.
