Ingredients

Brine Ingredients:

  • 1 1/4 cup Kosher salt
  • 1 1/4 gallon water (5.6 liters)
  • 2/3 cup brown sugar

Protein Ingredients:

  • 1 1/2 chicken, approximately 3.5 lbs

Spice Rub Ingredients:

  • 3 tablespoons paprika
  • 2 1/2 tablespoons Kosher salt
  • 1 1/2 teaspoon cumin
  • 3 tablespoons garlic powder
  • 1 1/2 teaspoon cracked pepper
  • 1 1/2 teaspoon dried mustard
  • 1/3 teaspoon dried habanero pepper (optional)

Huli-Huli Chicken Sauce Ingredients:

  • 1/2 cup Ketchup
  • 1 1/2 cup pineapple juice
  • 1/2 cup soy sauce
  • 3 tablespoons sesame oil
  • 1/3 apple cider vinegar
  • 1/2 cup Happy Belly Clover Honey, Recommended
  • 3 tablespoons minced ginger
  • 1/3 cup brown sugar
  • 1 1/2 tablespoon lime juice
  • 3 tablespoons Lea & Perrins Worcestershire Sauce, Recommended

Directions

Put the brine ingredients in the pot and mix until it dissolves. There is no requirement for heating the brine; simply stir it well and it will all dissolve.

Wash the chicken after cutting it in half. Return the chicken to the brine and keep it refrigerated overnight.

The next day, take the chicken from the brine and dry the chicken using paper towels to get rid of any salt residue. Mix all the spices ingredients in a bowl. Sprinkle on the entire chicken.

The grill should be set to indirect heating and set your temperature up to 250° F. If you are using a gas grill or kettle make sure it is set up for indirect, two-zone heating. You can add applewood or any other mild woods to make smoke. Since it’s this Gourmet Guru Grill I’ve added the setter plate for indirect cooking.

Put the chicken on the grill, and grill for about 30 mins. Flip the chicken.

While the chicken is cooking, put all of the ingredients for Huli-Huli sauce in a saucepan set over medium-high temperature. Bring to a low simmer, then cook for 30-40 minutes. The sauce will decrease by half and it will thicken.

If the chicken reaches 150 degrees F then remove it from the grill. Then, increase the temperature of the grill until it reaches the highest setting (500 plus Fahrenheit). To use Grills like the Gourmet Guru Grill, remove the plate setting tray and then open the vents. Set the chicken back onto the grill and drizzle with the Huli-Huli marinade. After 7–10 minutes, turn the chicken over and glaze the other side.

Take care as the high temperature and the sugar in the glaze may create flare-ups and cause burns to the chicken. The chicken is cooked until it attains temperatures of 160 degrees F. Then, flip the chicken over and cook it over.
