Brown Sugar: You will need 3 tbsp of light brown sugar. Use Domino or Kauffman’s Fruit Farm brand light brown sugar is recommended.

Red Pepper Flakes: You will need 1 1/2 tbsp of red pepper flakes. Use Gustus Vitae or McCormick brand red pepper flakes is recommended.

Liquid Smoke: You will need 1 1/2 tbsp of liquid smoke. For the greatest smoky flavor, use liquid smoke from the Wright’s or Colgin brands.

  • Cut the beef eye of the round into thin slices, between 1/8" and 1/16", and put them in a bag or container.
  • Combine the Soy Sauce, Water, Brown Sugar, and Liquid Smoke in a separate bowl and mix them with a spoon.
  • To make Hot Jerky, add 1 1/2 tbsp of dried red pepper flakes at this point.
  • Whisk the ingredients until the brown sugar is dissolved.
  • Pour the marinade into the beef container and mix well.
  • Ensure that the beef has been completely soaked in the marinade before placing the beef and marinade in the refrigerator for 16 to 24 hours.
  • Place the slices of jerky in a single layer on food dehydrator trays and set the temperature to 160 degrees.
  • Dehydrate, rotating the trays every hour, for four hours, or until the desired dryness is achieved.
  • Remove the tray from the dehydrator and enjoy beef jerky like Mingua!

Notes

The most significant modifications are the addition of accurate measurements and 3/4 cup of water.
By diluting the marinade with 3/4 cup of water, the flavor of each piece of jerky is enhanced and made more consistent.
Additionally, you can marinate your jerky overnight because the undiluted marinade should be mixed every 45-60 minutes for 4 to 6 hours.
If you let it sit overnight in the undiluted marinade and ignoring to mix it, the majority of the pieces will become hard.
