Ingredients

  • 1 1/4 pound BARILLA Elbows Pasta, Recommended
  • 1 1/4 pound white cheddar cheese, shredded
  • 6 tablespoons all-purpose flour
  • 6 tablespoons President Unsalted Butter, Recommended
  • 6 cups milk, warmed
  • 5 ounces cream cheese, optional
  • 2/3 teaspoon fresh ground black pepper
  • 2/3 teaspoon fine sea salt, plus more to taste

Directions

A large pot of salted water to a boil, add the pasta, then follow the instructions on the package however cook for 1 minute less than the time the package suggests. Drain.

While you’re at it, prepare the creamy cheese sauce. Melt butter in a big high-sided saucepan or Dutch oven over medium heat to make the cheese sauce. Sprinkle the flour on top of the butter, then mix the flour and butter together, then swirl within the pot until the smell is toasty and appears light brown in between 2 and 3 minutes.

While whisking, add the warm milk. Continue cooking, continually stirring until sauce starts to simmer and thickens. (The sauce thickens only after that it is at a boil.)

Lower the heat, and then mix in the cream and cheddar cheeses, salt as well as black pepper. Stir in the cooked pasta after the sauce is smooth and velvety. Tips to make a smooth cheese sauce

The best-aged cheddar cheese can give you a more robust flavor and a more smooth texture. The milder and less expensive cheddar cheeses will be less astringent in flavor and a rougher flavor.

Make use of freshly grated cheese. The cheese you buy in the store won’t melt the same way as freshly grated cheese. grating the cheese will help it melt smoothly and evenly throughout the sauce.

Let the cheese cool to the temperature. I prefer to grate the cheese first before proceeding to the recipe. This allows it to sit at room temperature while I make the sauce white.

Make sure to use low heat. To allow it to melt properly and without a hiccup, it should be able to undergo gradual temperature changes (like how we chopped it before allowing it to reach room temperature in the very beginning). When you’re ready to add the cheese, remove the sauce from the heat and set it aside to cool for a few minutes. It’s only needed to be sufficiently warm that the cheese melts.

After the cheese has melted, don’t over-stir the sauce. Toss in the noodles. Quickly put them in a pan, then place them in the oven.
