- 1 pound chicken legs or thighs
- 2 bundles (1.32oz each) vermicelli noodles
- 1 4-inch piece of ginger, sliced
- 4 stalks green onions, chopped
- 6 cups chicken broth
Put the vermicelli noodles in a bowl and cover them with water. Let it soak for fifteen minutes. Drain water and put it aside.
You have to season the chicken legs with salt. In a saucepan, brown both sides on medium-high heat (about 60 seconds on each side).
Add the sliced ginger to the pan. Add the chicken broth to the pan. Simmer for fifteen minutes until the chicken legs are cooked.

- 1/4 cup oyster sauce
- 1/2 teaspoon black pepper
- 1 clove garlic, minced
- Chopped spring onion
- 1/2 teaspoon Tabasco sauce
Soak long rice in warm water for ten minutes. Cut into thirds and boil for ten minutes. Drain it well.
Put remaining ingredients and mix with long rice.
Keep it overnight, tossing it several times while long rice is cooling.
Remove from the fridge thirty minutes prior to serving.
Simple Okazuya Long Rice Recipe
- 3 (4-ounce) packets of long rice
- 1 teaspoon salt
- 2 quarts water
For The Sauce:
- 1 cup soy sauce
- 1 thumb-sized piece of ginger
- 1/2 cup water
- 1 tablespoon rice vinegar
- 1 cup sugar
Bring water and salt to boil in a large pot. Mix the long rice.
