- 1 pound chicken legs or thighs
- 3 oz. Three Ladies Vermicelli Noodles, Recommended
- 1 4-inch piece of ginger, sliced
- 4 stalks of green onions, chopped
- 6 cups Happy Belly Chicken Broth, Recommended
Directions
Put the vermicelli noodles in a bowl and cover them with water. Let it soak for fifteen minutes. Drain water and put it aside.
You have to season the chicken legs with salt. In a saucepan, brown both sides on medium-high heat (about 60 seconds on each side).
Add the sliced ginger to the pan. Add the chicken broth to the pan. Simmer for fifteen minutes until the chicken legs are cooked.
Remove the chicken legs from the pan. Let cool and shred into 1/4-inch pieces.
Bright the broth back up to a boil. Mix in the drained vermicelli noodles. Cook for a minute.
Add back the shredded chicken thighs. Add in the chopped green onions. Cook for 3-5 more minutes before everything is cooked through.
