- 2 green bell pepper (diced)
- 2 tbsp oil (olive oil, canola oil, avocado oil, etc.)
- 2 teaspoon salt (plus additional to taste).

- 4 (31-ounce) cans of black beans (approx. 6-7 cups of cooked beans)
- Minced 6 cloves of garlic
- 1/2 teaspoon ground cumin (plus additional to taste).

- 1/2 cup fresh cilantro (chopped)
- 2 tbsp red vinegar
- For serving, Cotija cheese can be sliced and rolled.
In a big saucepan, heat the oil. Cook for 5-8 minutes, or until the bell pepper and diced onion are soft. Stir once in a while. Cook for about 30 seconds, or until the garlic is aromatic. Season with salt, cumin, and pepper.
Add the black beans. Add the canned beans to the pot. If you are using canned beans, add about 1 to 2 cups of water to ensure that the beans don’t burn. Reduce the heat to medium-low and continue to cook for another 7 minutes.
Mix in the red wine vinegar and chopped cilantro.
