Oure Other Recipes:
You can adjust the au jus recipe to make your prime rib larger or smaller than the suggested amount. For example, you might use 1/2 teaspoon of butter and salt per rib.
There is no need to use a roasting rack, as the rib bones are a natural rack that will lift the prime rib from the bottom of your pan.
Too much juice will result from cutting into the meat. Allow 30 minutes for resting before serving.
Remember that au jus does not make gravy. So don’t expect thick or heavy sauces.
The Internal Temperature Guide
This guide will help you determine the internal temperature of your prime rib. These are temperatures that will be used to remove the beef, not the final temperature. After the roast is removed, the roast will continue cooking. This is known as sitting time.
Rare Meat: The roast should be removed when it reaches 110 F.
Medium-Rare Meats: Take the roast out when it reaches 120 F.
Medium Meat: Take the roast out when it reaches 130 F.
