Cut off the tips of the wings and separate the wings from the legs using the help of a sharp knife.
Bring a large pot of salted water to a rolling boil. Parboil the wings for 8 approximately minutes.
Drain on wire racks for about 5 minutes until mostly dry, then wipe dry with paper towels.
Preheat the oven to 450 degrees Fahrenheit (230 degrees Celsius).
Working in batches, place 10 to 12 wings in a mixing bowl with 1 1/2 tablespoon sunflower and 1 1/2 tablespoon Mardi Gras Wing seasonings.
Toss until everything is evenly covered. Immediately transfer to a large shallow rimmed baking sheet.
Bake the wings for 20 minutes before flipping them and baking for another 5 minutes.
