  • Start by preheating your oven to 350°F (180°C).
  • In a large mixing bowl, cream together the unsalted butter and soft brown sugar until the mixture becomes light and fluffy.
  • Gradually add the beaten eggs to the butter-sugar mixture, making sure to beat well after each addition.
  • In another bowl, sift together the all-purpose flour, baking powder, ground cinnamon, pumpkin pie spice, and salt.
  • Now, fold the sifted dry ingredients into the creamed mixture, alternating with the soured cream and milk. Make sure to mix until everything is well combined.
  • Gently fold in the raisins until they are evenly distributed throughout the cookie dough.
  • Drop tablespoonfuls of the cookie dough onto a greased baking sheet, leaving enough space between them for the cookies to spread while baking.
  • Place the baking sheet in the preheated oven and bake for approximately 15 minutes or until the cookies turn a beautiful golden brown.
  • While the cookies are baking, prepare the icing. Sift the icing sugar into a bowl and add 3 tablespoons of boiling water and the vanilla essence. Stir until you have a smooth icing.
  • Once the cookies are out of the oven, immediately brush the icing over them. Be generous with the icing to get that delicious sweetness.
  • Put the iced cookies back in the oven for an additional 5 minutes. This will help the icing set and create a beautiful glaze.
  • Take the cookies out of the oven and let them cool on a wire rack. This allows them to set properly.
  • If you prefer, you can cool the cookies directly on the rack. Once they are cooled, prepare an alternative icing by sifting icing sugar into a bowl and adding 1 1/2 tablespoons of meringue powder. Whisk in the vanilla and boiling water until smooth. Spread this icing over the cookies and let it dry.
