Mix all the ingredients together, and your bulgogi sauce will be ready to be used in the making of the HelloFresh Beef Bowls.
To make Beef Bulgogi Bowls:
Wash and dry the entire produce. Bring to a boil, then reduce the heat to simmer and cover. Cook for 15 to 18 minutes, or until the rice is done. Keep the rice covered and heated until ready to serve. Meanwhile, you wait to trim and thinly slice the scallion. Separate whites from greens.
In a medium-size bowl make a mixture of half of the vinegar (you’ll need the rest in the future), sugar, and some salt. Cut off the ends of the cucumber. Utilizing a peeler, slice lengthwise, cutting cucumber into ribbons. Continue rotating until you reach the seedy center. Toss out the core. In a bowl, mix the ribbons together with the vinegar mixture. Keep aside, tossing them over frequently until the ribbons are ready to serve.
In a large, ideally nonstick pan, heat a drizzle of oil over medium-high heat. Add the carrots, and cook, stirring until tender, about 1 to 2 minutes. Put salt & pepper to taste. Remove from the heat and place on a plate.
In the same pan, heat another drizzle of oil over medium-high heat. Add the scallion whites, that you cook to make them fragrant for about 1 to 2 minutes. Add the beef and a bit of salt and black pepper to taste. Cook, breaking the pieces of meat until golden and cooked for up to six minutes. Add half of the sesame seeds (you’ll need more in the future) as well as the rest of the vinegar. Then, cook for 30 seconds, and then mix in the bulgogi sauce. Bring the sauce to a boil before turning off the flame. Add the addition of salt as well as pepper.
In a small bowl, mix the sriracha and sour cream to taste. 1 1/2 tsp at a time, stir add water until the mixture achieves a dripping consistency. Add salt to taste.
Using a fork, fluff the rice. Season with salt and pepper and 1 1/2 teaspoons of butter. Divide into bowls. Set the beef, carrots, and cucumbers with pickles on top.
Before adding the cucumber, drain any extra liquid. Drizzle the cream all over. Decorate with scallion leaves and as many sesame seeds as you’d like.
