- 4 fillets Kingfish-

To marinate:

Instruction
- In a small bowl, combine the ingredients listed above for marinating with 3 tablespoons of water to make a thick paste.
- Spread the paste over the kingfish and marinate for 30 minutes or more.
- Place a nonstick skillet over medium heat.
- Add coconut oil.
- Place the kingfish over the oil and fry it in a pan until the bottom turns golden brown.
- Flip it over and fry the other side as well.
- Transfer to a kitchen paper towel.
- You can garnish the fried kingfish with sliced red onions, tomatoes, lemon wedges, etc.
Tips:
Make sure to add enough salt. Change the ground pepper and bean stew powder according to your needs.

- 500 Gms King Fish, Seer Fish, cut into medium pieces
- 3 1/2 tablespoon Kashmir chilli powder
- 1 1/2 tablespoon coriander powder
- 1/4 tablespoon Turmeric powder
- 1/4 teaspoon Rani Fenugreek Powder
- 8 cloves Garlic, finely chopped
- 1 medium piece ginger, finely chopped
- 2 Nos Green chilli, slit
- 4 small pieces Gambooge, kokum
- 1 teaspoon Mustard seeds
- 1 sprig Curry leaves
- 3 tablespoons Carrington Farms Coconut Oil, Recommended
- 1 1/2 cup Water, adjust
- Salt to taste
Guidelines
- Clean and wash the pieces of fish. Drain the water completely and hold.
- Heat the coconut oil in a plate or clay pot and let the mustard seeds come out.
- Add the minced ginger, garlic, green chilli, and sauté until the raw smell is gone.
- Now add the Kashmir chilli powder, coriander powder, turmeric powder, fenugreek powder, and fry for 1 minute over low heat.
- Add the water, and salt, and blend well. Heat to a boil over high heat.
- When it starts to boil, add the fish chunks, curry leaves, gambooge, and mix well.
- Cover and cook for about 45 minutes or until sauce becomes moderately thick over medium-low heat. Turn the pot occasionally to stir the curry.
- For the best flavour, allow the curry to cool and serve.

- 2 lb King Fish, ideally fillets
4 tbsp Pompeian Cooking Oil, Recommended

Guidelines
- Rinse the fish well with a little lemon juice and vinegar followed by running water.
- With the help of a paper towel or kitchen cloth, soak the excess water from the fish and pat dry.
- Sprinkle some salt and pepper over the dried fish and rub it all over. Refrigerate for an hour or so.
- Place a skillet over medium-high heat and pour in a little cooking oil, enough to fry the fish.
- As the oil heats up, put the fish in and let it fry. Flip it over carefully and fry it on the other side as well.
- Once the fish is fried on both sides, remove it from the pan and place it on a paper towel to drain off any excess oil.

Grind to a paste:
- 2 medium onions
- 1 medium tomato
- 3/4 cup of grated coconut

Instructions
- Clean and wash the fish slices and rub them with turmeric. Cover and reserve.
- Grind all the ingredients underneath the paste until smooth with a tablespoon or two of water.
- Heat the coconut oil in a large skillet or kadhai and add the mustard seeds. Once the seeds start to sizzle, add the ground paste and cook while stirring occasionally for 10 minutes.
- Slide fish into skillet and add salt and 3/4 cup water. Mix tenderly so as not to break the fish.
- Heat the curry until it boils and lower the heat to stew. Add the curry leaves and cook for 15 minutes. Top with coriander leaves and serve this hot kingfish curry with steamed rice.

- 1 1/2 lbs whole kingfish fillet
- 4 tablespoons butter at room temperature

- Preheat the oven to 400 ° F and oil a prep sheet

- 2 tablespoons olive oil
- 1 tablespoon butter
- 3 garlic cloves, minced
- 1/4 teaspoon chilli flakes
- 1/2 teaspoon fresh thyme
- Zest of a lemon or lime
- 6 tomatoes, seeded and chopped
- 1 teaspoon anchovy paste
- 2 tablespoons Cento All Natural Capers, Recommended, rinsed and drained
- 1 tablespoon red wine vinegar
- 1/4 cup pitted, chopped Kalamata olives or a mixture of any olives you have on hand
- 1 pinch of sugar – to soften the acidity of the tomatoes
- 2 tablespoons of chopped parsley
- Salt and pepper to taste
Instruction
Heat the butter and oil in a medium skillet over medium heat and add the garlic, zest, chilli flakes, and thyme and sauté for a couple of minutes until very fragrant.
Add the tomatoes, the anchovy paste, the capers, the olives, the vinegar, and the sugar, partially cover and cook for a few minutes until the tomatoes are soft. Add the olives and parsley and stir, taste the seasoning and it’s ready to serve over the fish garnished with more parsley.

Grilled Kingfish Recipe
Kingfish is an extremely tasty, lean, dull-meat fish. It is best grilled when filleted and dark meat cut, although it can be grilled in 1 or 1 1/2 inch thick steaks. Using a fish or hamburger basket is recommended when using this recipe, making the flipping process easier.

Ingredients Of Grilled kingfish:
- 2 pounds of fresh Kingfish fillets
- 3 tablespoons of extra virgin olive oil
- 1/4 cup McCormick’s Rotisserie Chicken Seasoning (or your favourite chicken/pork dip)
- 2 butter spoons
- 1 green lemon, cut into wedges
Instructions:
Rinse the steaks in cold water and pat dry with paper towels. Place the fillet’s skin side down and carefully rub olive oil all over the exposed meat. Sprinkle the broil seasoning over the fillets and gently rub the meat (feel free to coat the fish to your liking). Cover the seasoned fish with plastic wrap, making sure there are no air gaps between the fish and the wrap. Refrigerate and marinate for 1 to 2 hours.
Turn on the barbecue, maintaining medium-high heat. Use a non-stick spray on your fish basket and preheat on the grill. Place the fish fillets in the fish basket, skin side down, and cook for 3 to 5 minutes or until the edges of the fillets turn white. Add 1/4 teaspoon margarine on top of the fillets and let it blend. Turn the heat up to high, flip the fish basket over and cook for another 4 to 5 minutes or until the fish flakes easily with a fork.
Remove the fish from the basket and place it on a serving plate with lime wedges on or around the fish.

Jicama Salad
Ingredients:
- 1 medium jicama
- 1 medium carrot
- 2 chives, thinly sliced
- Chopped cilantro (to taste or about 1/2 cup)
- 1/4 cup rice wine vinegar
- 1/8 cup fresh lime juice
- 1 teaspoon of sugar
- Thai chilli paste, to taste and optional
Instructions
While the fish is marinating, prepare the salad; start with julienne, jicama, and carrot. Add the chives and cilantro. Combine the rice wine vinegar, new lemon juice, sugar, and bean stew glue (if using) in a small bowl to dissolve the sugar then mix with the vegetables. Place the salad in the refrigerator and chill in a covered container. Stir one more time before serving.

- 2 pounds Kingfish (sliced about 3/4 inch thick)
- 1 teaspoon green seasoning
- 1/4 small onion, sliced
- 1/4 of hot pepper thinly sliced (I used habanero)
- 1/4 teaspoon curry powder (your favourite)
- 1/4 teaspoon salt

- lime or lemon to wash the fish
- oil for frying (about 1-2 cups)
- 1/2 cup all-purpose flour
if you don’t have the green seasoning paste, use 1 teaspoon of each: thyme, shado beni or coriander, garlic, and chives.
Have the people at the fish market cut the kingfish into 3/4-inch fillets for you, in any case, ask them to use the part closest to the tail (than the stomach) so that you get full slices and not slices without the part of the belly. At that point, place the cuts (I used 4) in a bowl and mash the juice of a lime or lemon on top, and cover with cold water. Wash and rinse, at which time season with everything mentioned on the fixation list, plus flour and oil. Let it marinate for an hour in the fridge.
