Sari Sari Recipe, a Filipino classic dish that features bitter melon and is prepared by many different cooks. There are very few vegan options for this traditional Filipino dish. It is traditionally loaded with pork, shrimp, and other mystery meats.

Although my version is not traditional, it was easy to recreate the delicious seafood-y flavors thanks to the abundance of umami in fermented black beans and wakame seaweed. If you don’t use all of these secret ingredients, the stew will suffer. This simple mixture of vegetables needs love and attention to shine. That’s exactly what I took out of my bitter melon experience.

The bitter melon is the first ingredient in Filipino sari-sari. These vegetables become more acerbic as they age, so choose smaller, brighter specimens.

Ensure that any spongy membranes and seeds are removed. It has a concentrated sour taste, much like the orange pith.

Salt draws moisture and bitterness out of the food, making it easier to cook.

Blanch the vegetables in boiling water for longer than most vegetables can withstand. Although you may lose some structural integrity. I found that boiling for 8 to 10 minutes made a big difference in overall palatability.

  • 4 Medium Tomatoes, Diced
  • 8 Garlic Cloves, Finely Minced
  • 2 inch Fresh Ginger, Peeled and Finely Minced
  • 4 Tablespoons Olive Oil
  • 1 1/2 Pound String Beans, cut into 1-inch Pieces
  • 4 medium Filipino/Long Eggplants, sliced into 1/2-inch Rounds
  • 4 Tablespoons Fermented Black Bean Soup
  • 4 Tablespoons Tomato Paste
  • 4 Tablespoons Marukan Rice Vinegar, Recommended
  • 4 Tablespoons Soy sauce
  • 2 Tablespoon Instant Wakame Flakes


The bitter melon should be the first to be prepared because it takes the most time and effort. You’ll be done with the rest of your stew assembly in no time!

Using a sharp knife, cut the bitter melon in half along its length. Scoop out the seeds with a big spoon. You can also remove any inner membranes and throw them out.

Cut the seeded pumpkin into quarter-inch pieces and then toss in a large bowl with a generous amount of salt. Everything will be wiped away in a matter of minutes. As a result, don’t be scared to use half a teaspoon. Allow resting for at least 20 mins while you cut and dice the other vegetables.

A large pot of water should be brought to a boil. Cook the salted bittermelon for 10 minutes. Drain the soup and rinse immediately with cold water.

Place the pot on the stove and heat the oil. When the oil has melted, add the ginger and garlic to the pot. After about two minutes, add the seitan. Mix well and continue to cook for about 10 minutes. Stir in the remaining vegetables and cook for 5 to 8 minutes.

Add the first 5 cups of vegetable broth and all the other ingredients. Combine all ingredients in a large mixing bowl, then decrease the heat to medium-low and cook for 20 minutes, or until veggies are soft. If you prefer a soupier stew make sure to add more broth and heat up. For a complete dinner, serve with sticky rice.

Utan Bisaya is a traditional Filipino vegetable dish made up of a variety of vegetables. Water is used to cook the veggies, and fish is occasionally added.

It resembles other Philippine regional meals such as Dinengdeng or Inabraw, Bulanglang, and Laswa in appearance ( Western Visayas).

This recipe may appear simple, yet it is chock-full of vitamins and nutrients that can help us stay healthy. The fish, as well as the long green pepper, are optional in this dish. I added these to make my dish more flavorful and spicy.

  • 10 stalks of green onions sliced
  • 3 cup squash cubed
  • 2 piece eggplant sliced
  • 4 thumbs ginger sliced
  • 2 piece tomato wedged
  • 20 pieces okra
  • 3 cups spinach or Alugbati
  • 4 slices of fish fillet baked or fried
  • 2 cup Malunggay leaves
  • 4 pieces of long green pepper
  • 2 cup loofah patola, sliced
  • 3 cups string beans cut into 2-inch length
  • 4 cups water
  • salt to taste


Bring the water to a boil in a large pot.

Add the ginger and squash. Boil for another 8 minutes. Cover and continue to boil.

Add the string beans, scallions, and tomato. Allow the liquid to boil again, then add the eggplant and long green pepper.

Combine all of the ingredients and then add the fish. Cover the fish and let it cook for 10 minutes.

Add the malunggay and patola leaves. Cook covered for 3 to 5 mins. Salt to taste. Add spinach.

Transfer the mixture to a bowl. Serve.

  • 14 pcs. string beans, sliced by 2 inches
  • 2 pc. medium Chinese eggplant
  • 16 pcs. okra (lady’s fingers)
  • 2 pc. ampalaya (medium bitter gourd) cored and sliced
  • 3 cup Calabasa (squash) cubed
  • 2 pc. medium yellow onion, sliced
  • 2 cups tomatoes, sliced
  • 1 1/2 cups vegetable broth
  • 8 cloves garlic, crushed
  • 1 tbsp. salt to taste
  • 4 tbsp. Pompeian Cooking Oil, Recommended
  • 1/2 tsp. pepper or pepper to taste


In a large saucepan heat oil over medium heat. Add the tomato to the pan after the onion and garlic have cooked for 2 minutes.

Add the squash. Stir, and continue cooking for 2 minutes.

Mix in the lady’s fingers and string beans. Stir fry for three minutes.

Add the vegetable broth, cover, and simmer for 5 to 7 min.

Season with salt and pepper to taste.

Place on a platter with steamed rice and serve.

Serve it hot.

Sari Sari Recipe With Pork And Shrimp

The tender pork is complemented by the sweetness of the squash. On a cold night, the broth is rich and delicious. Place the soup in a pot and bring it to a boil.

Locally, this dish is also called “Pork Sarisari”, as it contains a mixture of vegetables. A shrimp version is also available at local Ilocano restaurants. A word of caution. This dish is the only one that originated in Hawaii from Ilocanos who migrated to Hawaii during the plantation era in the 1900s.

  • 12 c. chicken broth
  • 4 TB vegetable oil
  • 8 garlic cloves, crushed
  • 1/2 lb small shrimp, peeled, deveined
  • 2 lb. crispy roast pork, 1 ½-inch chunk
  • 2 large onions, sedges
  • 4 TB white vinegar
  • 4 TB patis (Thai Kitchen Fish Sauce, Recommended)
  • 2-inch ginger, peeled, crushed
  • 4 TB tomato paste
  • 2 tsp. salt
  • 4 long eggplants, 2-inch pieces
  • 4 large tomatoes, wedges
  • 2 medium bitter melon, seeded, ½-inch slices
  • 1 lb. long beans, 2-inch pieces


Sauté onion, garlic, and ginger in olive oil in a large saucepot.

Add the patis, vinegar, and tomato paste. Finally, add the broth. Mix well.

Bring to boil. Reduce heat.

Add tomatoes, eggplant, long beans.

Cover and cook until the vegetables are soft.

Mix bitter melon with shrimp and cook until shrimp turn pink.

Season to taste with salt or fish sauce.

Stir in the roast pork, and heat through.

Don’t stir, instead, shake the pot.

How to Serve:

Serve pork while it is still crispy.
