Chocolate Chess Pie Recipe With Graham Crackers

This Chocolate Chess Pie is a great choice for chocolate pie lovers. It’s almost like a brownie with a pie crust. It’s a great tradition! I made it with a graham cracker pie crust.

Crust:

  • 7 tablespoons unsalted butter melted
  • Graham crumbs (1/2 cup) (about 9 whole Graham crackers).
  • 14 cups granulated sugar

Filling:

  • 4 ounces semisweet chocolate cake chopped
  • 8 tablespoons unsalted butter
  • 1 cup granulated Sugar
  • 1 tablespoon all-purpose flour

  • 1 large egg white
  • Use chocolate whipped cream for garnish

Directions

The pie will be very large if it is made using a standard 9-inch pie plate, as the photos show. It is best to bake it on a cookie sheet, so it doesn’t spill over. A 10-inch pie plate is fine but no smaller than 9. A 9-inch deep-dish pie pan can also be used.

The crust should be baked. Preheat the oven to 350 degrees Fahrenheit. Blend the graham crackers until you get a fine crumb. You can also place the graham crackers in a large Ziploc bag that is large enough to hold a lot of crumbs and then roll them using a rolling pin.

In a mixing dish, combine the sugar and butter. Place the mixture in a 9-10″ pie plate or 9-inch deep-dish pan. Press down on the bottom. Bake for 10 minutes or until set.

To make the filling, melt the butter and chocolate in a medium bowl. I melted the chocolate in the microwave. You can alternatively melt the chocolate in a bowl over hot water in a saucepan.

After the chocolate has melted, add the flour, sugar, and vanilla. Mix in the eggs one at a while, then add the egg whites. Continue whisking until the mixture is smooth. If using, stir in the peanut butter cups.

Place mixture in prepared crust. Bake for 35 to 45 minutes or until the top is puffy and filling is set in the center. Allow cooling.
Serve at room temperature. Serve with whipped cream, ice cream, or both. Note that I make pretty slices by chilling my pies for a few hours before I cut them. This is the key to perfect slices!

Recipe Notes

For other combinations, you can substitute peanut butter cups with chocolate chips or nuts.

  • 1/2 cup buttermilk (room temperature)

Direction

Pre-heat your oven to 350F

Combine sugar and eggs in a large bowl. Take cautious not to overwork yourself. Combine cornmeal and chocolate powder in a mixing bowl.

Mix in buttermilk, followed by buttermilk, vanilla, and Fernet. Place the mixture in a pre-cooked pie shell. Carefully transfer it to your oven. For 30 minutes, set a timer. After 30 minutes, turn the pie 180° and cook for 20 more (if the crust becomes too dark, move it to the front of the oven).

Your pie should now have a crust. The pie should be firm around its edges and slightly jiggled in the middle when you gently shake it. Let your chess pie cool for 3 hours at room temperature. After that, you can either slice it and eat it right away or chill it to make a chilled dessert.

The pie can be kept in the fridge for up to three days.

I prefer to use pre-made, rolled-up pie crusts when it comes to the pie crust. This allows me to use my own crust, but it doesn’t require me to make a homemade one – which is something I love. The pre-made frozen crusts are equally good. If you are a pro at baking, you can also make your own crust if you have the time.

Be aware that aluminum pan crusts from the grocery store can be fragile. To make it easy, place the crust in a small baking dish before you fill it.
