In a stand mixer, mix yeast, water, and brown sugar. On low speed, combine for two minutes.
Mix in the flour, olive oil, and salt for 10 minutes, or until the dough forms and is shiny.
Place the dough in a large mixing bowl and let it rise until doubled in size (This takes roughly 2 to3 hours, depending on your temperature, etc.)
Make 16 pieces of dough.
Roll out pieces of dough and lay around 16 slices of pepperoni and some cheese in the center.
Bring the dough edges up and seal around the pepperoni-cheese mixture.
Put the rolls on a baking sheet lined with parchment paper or sprayed with nonstick cooking spray.
You should give them 2 hours to proof.
The next step is to bake the dough for 15 minutes at 350 degrees Fahrenheit, or until it is golden brown.
