Preheat the Oven: Preheat your oven to 300°F (150°C).
In a big bowl, combine the old-fashioned oats, chopped pecans, light brown sugar, shredded coconut, ground cinnamon, and salt.
In a saucepan, heat up the vegetable oil, maple syrup, and honey until they're warm but not boiling. Then, whisk in the vanilla extract.
Carefully pour the warm liquid mixture over the dry oat mixture. Stir gently with a wooden spoon until everything is well mixed. You may need to use your hands to finish mixing.
Take a 15x10-inch baking pan and spread the granola mixture evenly inside.
Place the baking pan in the preheated oven and bake for 40 minutes. Remember to stir the granola every 10 minutes to ensure it bakes evenly.
Once it's done baking, remove the pan from the oven and place it on a cooling rack. Let the granola cool completely in the pan.
After the granola has cooled, stir in the raisins. They add a delicious sweetness.
