Mix yeast with warm water.
Allow it to sit in a quiet place for approximately 10 minutes.
There should be small bubbles forming. This indicates that the yeast is active.
Mix the oil, eggs, salt, sugar, water, and yeast mixture thoroughly in a large bowl.
One cup of flour at a time, stirring thoroughly after each addition.
Knead until it is elastic and smooth.
Allow rising until doubled, approximately 2 hours.
Repeat the kneading process and rise. Punch down.
Cut dough into two pieces.
Let it rise, and then cover it for 10 minutes.
Form into two loaves that are about 14 inches in length.
Spread on greased cookie sheets, then cover.
It is time to rise again, approximately 60 minutes.
Cut a slash in the middle of the bread or three slashes diagonally across the top (Optional).
Bake the loaves for 22 to 25 mins until the tops are golden brown and the bread sounds hollow when you tap them at the bottom.
