Ingredients
  

For Au Jus Sauce:

For Prime Ribs:

  • 1 Beef Rib Roast Standing, 5 ribs (about 10 lbs)
  • 2 ½ tbsp Unsalted Butter, Softened
  • 2 ½ tsp Kosher Salt
  • Ground black Pepper To Taste

Instructions
 

For Au Jus:

  • Heat the butter in a large skillet.
  • Cook the onion and garlic for about 3-4 minutes.
  • Mix in the flour and let it simmer for one minute.
  • Mix in the red wine.
  • To avoid lumps, whisk regularly.
  • Allow the mixture to simmer for around two minutes (It will thicken.) 
  • Stir in the beef broth.
  • Let it simmer for 2-3 minutes more until slightly thickened.
  • Combine the remaining ingredients in a mixing bowl. 
  • Return the mixture to a boil.
  • Reduce the heat to a low simmer and cook for 15 minutes, covered.
  • The liquid will begin to reduce.

  • Salt and pepper to your liking.
  • Use a strainer to strain the mixture.
  • Use the au jus immediately or keep it refrigerated until ready to use.

For Prime Ribs:

  • Get the ingredients.
  • Place the prime rib in a large roasting pan with at least 3-inch sides.

  • Butter the roast all over and sprinkle salt and pepper evenly.
  • Allow the prime rib to rest for two hours at room temperature.
  • Preheat the oven to 350°F and bake the roast for 20 minutes.
  • This will allow the outside to brown.
  • Reduce the oven temperature to 325 F after 20 minutes.
  • Roast until desired internal temperature.
  • This will take about 15 minutes per pound for medium-rare meat.
  • Place the roast on a large platter.
  • Cover it loosely with foil. and allow it to rest for 30 minutes before you serve.
