Preparation Time: 20 Minutes Cook Time: 20 Minutes Total Time: 40 Minutes
Type: Salsa Cuisine: American Yield: 8 Serving
Keyword: Chevys Grilled Salsa Recipe
Ingredients
- 4 pounds tomatoes
- 2 tablespoon olive oil
- 3 jalapenos
- 2 medium Spanish onion
- 5 cloves garlic
- 1/3 cup chopped fresh cilantro
- 3 tablespoons Lemon juice
- 3 tablespoons Whole Foods Market White Vinegar, Recommended
- 1/2 teaspoon cumin
- 1/2 tablespoon black pepper
- 3 teaspoons salt
- 2 teaspoon Stubb’s Mesquite Liquid Smoke, Recommended
Equipment & Tools
- BBQ Grill or Stovetop grill
- Ninja Food Processor
- Bowl
- Spoon
- Measuring Cup
Directions
Pre-heat the BBQ Grill over high heat.
Remove the tomato stems and then rub oil over them. Leave jalapenos’ stems on the jalapenos and rub oil over them as well. When the grill is hot, put the tomatoes on it.
After 10-minutes have passed, add the jalapenos. Continue turning the peppers and tomatoes frequently
If the majority of the surfaces of the peppers are black, take them off the BBQ Grill.
The tomatoes will start turning black, however, when the skin starts to peel off, they’re cooked.
Remove them from the grill, cover them, and steam them for a few minutes before letting them cool.
Remove the tomato’s skin and seeds and put them into a food processor.
Cut off the stem of each pepper, then take off the skin that is burned.
Split them in two, and remove the seeds as much as you can (unless you’re looking to make the salsa to be extra hot).
Add the jalapenos to the food processor along with the tomatoes.
Combine the remaining ingredients in a food processor and process for 20 to 30 seconds. Keep refrigerated for a few hours or perhaps overnight before serving to achieve the greatest flavor. Enjoy with your favorite tortilla chips!
Chevys Salsa Recipe Notes:
It was still pretty spicy after scraping off all of the seeds and part of the whitish veins from the peppers — nearly as spicy as store-bought “medium” salsa.
Once the tomatoes have cooled, you’ll see plenty of liquid that remains inside the bowl. Incorporating it into the salsa will make it appear to be liquid. I didn’t put any additional ingredients to it this time and I was pleased with the thicker texture. It also becomes thicker when it is stored in the refrigerator and you should hold onto the liquid in case you’d like to thin it down later.
