Preheat the oven to 350 Degrees Fahrenheit.
Add unsalted butter, peanut butter, granulated sugar, brown sugar, egg, and vanilla extract in a stand mixer fitted with a paddle attachment.
Cream the mixer together with the help of a stand mixer.
In another mixing bowl add all-purpose flour, baking soda, and salt.
Mix the dry ingredients with your hands.
Now add the dry mix to the stand mixer bowl and beat until incorporated.
Take a scoop to measure and make balls with your hands and put them in the sugar and roll them up.
Place them on a cookie sheet 1 1/2 inches apart.
Cookies can be made into a crisscross pattern by pressing them down with a fork.
Bake the cookies for about ten minutes at 350 degrees.
Let the cookies cool completely on the baking sheet.
